Sugar tooth 1# Carrot Cake

Combination of beta carotene, cinnamon, crunchy walnut and cream cheese frosting is uh-may-zink!. The first time I had this uber sensation was when I first discovered Secret Recipe. One day, my mom overfilled her shopping basket with fresh carrots, hence, carrot cake was experimented in our kitchen.

I miss everything that mommey made for me,sadly to have all of them here obviously impossible. Thus, with the power of the search engine, I discovered the recipe to satisfy my craving.



Ingredients:-
  • 4 eggs
  • 1 1/2 cup sugar
  • 2 cups plain flour
  • 1 cup oil
  • 2 tsp vanilla essence
  • 1 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp cinnamon powder
  • 2 1/2 cups grated carrot
  • 1 cup of walnut
Methodology:-
  1. Heat up the oven at 170 degrees Celsius.
  2. Beat eggs and sugar, add in oil and vanilla essence. Beat thoroughly.
  3. Add flour, baking powder, baking soda and cinnamon. Mix well.
  4. Add in carrot, and walnut. 
  5. Placed in greased pan - into the oven it goes for about 40 minutes.
  6. Check before u take it out, poke a skewer into the cake to make sure it comes out nicely without batter stain on its end. If it's not well baked, leave it in the oven for about 5 minutes
**For the cream cheese frosting, I used I cup of cream cheese beaten in I cup of icing sugar and a tsp of vanilla essence. Pour on cool cake, smudge to even out, refrigerate to set. 
** I usually halve the ingredients since I'm a lone eater, so I don't need the big cake. It always turns out alright.
